TubeORIGINAL Olive Tapenade is a versatile and flavorful condiment that pairs perfectly with cheeses and the classic “Caprese” salad. This condiment is particularly delightful when used to season fish or as a gourmet accompaniment for meat courses.


The pitted green olives used for this tapenade are of the "Nocellara del Belice" variety. These olives are typical for the Italian region Sicily and are appreciated for their rich and fruity flavor. Their fleshy pulp and slightly sweet characteristic taste blend perfectly with the other tapenade ingredients, creating an intense and pleasant mixture.

  • 200 g of mixed greens (lettuce, arugula, lamb's lettuce, etc.)
  • 250 g of turkey bites
  • 150 g of smoked provolone
  • 100 g of olive tapenade
  • 4 tablespoons of extra virgin olive oil
  • Juice of half a lemon
  • Salt and pepper to taste

Preheat the oven to 180°C and prepare the baked turkey bites: arrange the turkey bites on a baking sheet lined with parchment paper. Drizzle with a bit of olive oil, season with salt and pepper. Bake for approximately 20-25 minutes or until the turkey is well cooked and golden. Once cooked, let them cool slightly.

Cut the smoked provolone into cubes. In a large salad bowl, arrange the mixed greens. Add the cooked turkey bites, smoked provolone cubes, and TubeORIGINAL olive tapenade.


Dress the salad with 2 tablespoons of extra virgin olive oil, salt, and pepper. Gently toss to distribute the seasonings evenly. Serve the mixed greens salad with baked turkey bites, provolone, and olive tapenade as a main dish or side dish. You can accompany it with toasted bread croutons if desired.
